Ravioli di brasato

 

Pasta: Sfoglia di semola con 6 uova grandi intere per chilo.

Ripieno: carne di manzo (coscia) con cipolla, sedano, carote, pomodoro; noce moscata, cannella. Alla macinatura si aggiungono poi 2 uova e formaggio grana.

Cottura: a bassa temperatura per 2/3 ore.

Abbinamento con vino rosso: barbera o bonarda.
