SOFIA

Sofia is a machine with a centrifugal mixing tank that allows a static, homogeneous and faster hydration of the dough. This patented system allows the extrusion of all types of flour and mixtures.

Sofia is equipped with a safety system, thanks to the latest generation card, automatically reversing the rotation for 15 seconds and stopping the machine in case of inconsistent dough. This “smart system” makes it possible to safeguard the machine.

DIES EQUIPMENT:

N.4 bronze dies (shape n. 77 maccheroni, n.35 tagliatelle, n.220 casarecce, n.240 fusilli).

OPTIONAL:

  • The electric cutting system

Adding the new kitchen kit, the machine can produce bread, pizza and cake dough as well as sauces, creams and fillings.

  • New kitchen kit:
    – Mixing paddle for bread, pizza and shortcut pastry
    – Container to insert in the steel tank to make sauces, creams and fillings. The container is equipped with a paddle blade to chop and a butterfly paddle for mounting whipped creams, egg whites, and more.
